Pizza Bites onToast or Mini Pita Bread

These bites are very easy to make and quite popular as horderves (hors d'oeuvres) with drinks or tea party. I first had them at a hotel bar in Papua New Guinea, of all the places in the world! The waiters kept bringing platters full and they kept disappearing very fast. The same happens when I make them at home for a party.

Picture shows mini nan toasts.


  • 1 slice of large bread or a couple of slices of ciabatta or Focaccia bread per person or mini nans or mini pita breads, at least 2 per person

  • Pizza topping: Tomato based pizza topping of choice. You can buy it ready made or make it at home. Ready-made Pestos of different types are also very tasty as pizza topping.*

  • 1 tbsp. grated cheese of choice (mozzarella or cheddar or a mix of cheeses) per toast. Adjust amount to size of toast/nan and as per your taste.

  • You can add finely chopped peppers/mushrooms/ham/other meats of choice/anchovies to the tomato paste.

  • *Ready made Pizza topping or pesto sauces are better, but not essential, for this recipe, because they are generally less runny, making cutting the cooked pizza toasts into little squares easier.


  1. Mix together tomato purée, chopped onions, Italian herbs, salt and pepper.

  2. Toast slices of bread/ciabata/focaccia bread lightly. With mini naans, this helps to split them into 2 halves each.

  3. Spoon a little pizza topping on each piece and spread it out.

  4. Sprinkle it with cheese. Place on a tray.

  5. Cook in a hot oven or under a grill, until cheese melts and bubbles.

  6. Cut into little squares or circles using a knife or pastry cutter.

  7. Serve immediately while still hot.
