Pizza Bites onToast or Mini Pita Bread

I first had them at a hotel bar in Papua New Guinea, of all the places in the world! It was around 2005-2006. The waiters kept bringing platters full and they kept disappearing very fast. The same happens when I make them at home for a party.

These bites are very easy to make and quite popular as hors d'oeuvre, with drinks or for a tea party.

Picture here shows these made on mini pitta breads.

Ingredients

  • A packet of mini Pitta breads or sliced bread or any flat bread of choice that can easily be cut into bite sized pieces.

  • A jar of Pizza topping tomato based paste of choice

  • Cheese of choice, I usually use mature cheddar cheese

  • 1 red onion, chopped finely

  • 1-2 green chillies, chopped finely

  • A green herb of choice to sprinkle on top. I often use coriander leaves, because I love them.

  • Any toppings that you like on pizza will be fine here, but don't make them too heavy. they are just appetizers.

Instructions

  1. Mix together tomato puree, chopped onions, Italian herbs, salt and pepper.

  2. Toast slices of bread/ciabatta/focaccia bread lightly. With mini naans, this helps to split them into 2 halves each.

  3. Spoon a little pizza topping on each piece and spread it out.

  4. Sprinkle it with any other topping and then sprinkle some cheese. Place on a tray.

  5. Cook in a hot oven or under a grill, until cheese melts and bubbles.

  6. If using slices of bread, cut into little squares using a sharp knife or pastry cutter.

  7. Sprinkle a fresh herb of choice, if you like.

  8. Serve immediately while still hot.
