Hungarian Cucumber Salad

Ingredients

  • 2-3 cucumbers, sliced

  • 2 tsp. salt

  • 3 tbsp cider vinegar

  • 1 1/2 tsp. sugar

  • 1/4 tsp. paprika

  • 1/4 tsp. white pepper

  • 1/2 clove garlic, minced

  • 4 fresh green onions, diced (spring onions)

  • 1 cup thick sour cream (if not available, use thick natural yoghurt)

  • 1/4 teaspoon paprika

Instructions

  1. Slice cucumbers thinly into bowl.

  2. Sprinkle with salt, mix. Set aside for 1 hour.

  3. Mix vinegar, water, sugar, paprika, white pepper and garlic in a small jar and set aside.

  4. Squeeze liquid from cucumber slices a few at a time, by pressing between your palms. Discard liquid. Place in a bowl.

  5. Add vinegar mixture from step 2, green onions, and sour cream. Mix and sprinkle additional paprika over top. Chill for 1-2 hours.

  6. Salad Selection.
