Ham, Mozzarella Cheese and Rocket Salad

All amounts are approximate. Omit ham when making for vegetarians. You can add slices of red onions, if you wish. This simple salad to make.

Serves 2-4 people.

Ingredients

  • 1-2 cups of mixed salad leaves

  • A handful rocket salad leaves*

  • 4-5 slices of torn up Parma ham

  • A 2-3 inch block of buffalo mozzarella cheese, torn or cut into pieces

  • 10-12 cherry tomatoes

  • 4-5 slices of ripe mango or nectarine

  • A few shavings of parmesan cheese

  • 2-3 tbsp. balsamic vinaigrette**

  • You can a few pomegranate seeds

  • * Rocket salad leaves they taste a bit like Mooli leaves and can be substituted.

  • ** Vinaigrette: Mix 30 ml. balsamic vinegar, 20-30 ml. extra virgin olive oil, a tsp. whole grain/other mustard and salt and pepper to taste. Herb of choice can also be added.

Instructions

  1. Prepare and place all salad ingredients in a bowl.

  2. Add vinaigrette and mix gently with forks.

  3. Serve immediately or cover with a cling film and keep in the fridge.
