Salmon or Tuna Fish and Corn Salad

This is a very quick and easy salad to make. All you need is a tin of corn, a tin of salmon or tuna fish and some mayonnaise (Pic 1 & 3). You can add other things to it, like chopped onion, green chillies, tomato ketchup etc. (Pic 2 & 4)

You can use it as a filling for delicious sandwiches, rolls (Pic 5 & 6) or Taco (Pic 7) or, Pita bread pockets. It can be served as a side dish at buffets. Tinned Salmon can be used in place of tinned Tuna. Serves 4

Ingredients

  • 400 gm. tin of salmon or tuna in brine (not oil)

  • 200 gm tin of unsweetened sweet corn in brine or water

  • 1/2 red onion or 2 spring onion, finely chopped (optional)

  • A good sprinkle of freshly ground black pepper or 1 Chopped green chilli or 1 tsp. Tabasco sauce (optional). You can add all, if you want it extra hot.

  • 2 tbsp. Mayonnaise, adjust to taste

  • 1 tbsp. salad cream

  • 1 tbsp. tomato ketchup

  • Salt to taste

  • Optional extras

  • Finely chopped yellow or red pepper

  • 1 fresh tomato, deseeded and chopped

  • You can add a few mustard cress leaves for colour as well as sharpness

Instructions

  1. Drain salmon/tuna, place in a bowl and break into large flakes.

  2. Add all ingredients and mix gently, without breaking the fish too much. Taste and adjust seasoning and mayonnaise/salad dressing.

  3. Cover and chill for a couple of hours.

  4. Serve chilled.

Notes

  • You can add other things to it, like finely chopped fresh herbs, finely chopped tomatoes (after removing seeds), red/yellow peppers, to name a few.

  • This recipe can be used to make salmon salad too.
