Pasta with Prawns and Fresh Spinach

This is an easy dish to make and can be served hot or cold. It can be made in advance and reheated in a microwave. You can use any selection of vegetables you have, like Mange tout, courgette, peas, tomatoes, rocket leaves etc. Serves 3-4

Ingredients

  • 200 gm. pasta of your choice

  • 200 gm. cooked prawns (large ones are better)

  • 2 tbs. olive oil

  • 2 cloves of garlic, peeled and grated

  • 1 medium onion, peeled and sliced

  • 2 medium courgettes (tori/turai), sliced diagonally

  • 1 cup fresh spinach leaves

  • 200 gm. cherry tomatoes of good flavour, halved

  • 2 green chillies, thinly sliced

  • 2 tbs. lime or lemon juice

  • 2 tsp. balsamic vinegar of good quality

  • Salt to taste

  • A good sprinkling of freshly ground pepper

Instructions

  1. Boil the pasta as per instruction on the packet, usually 7-8 minutes. Strain in a colander and run cold water over it. Keep aside.

  2. Heat oil in a large pan. Add garlic and onion and fry for 2-3 minutes..

  3. Add courgettes and fry on moderate heat for 3-4 minutes. Don't overcook courgettes, they should be crisp.

  4. Turn heat off, add spinach leaves, stir and allow to cool. Spinach leaves will wilt.

  5. Add pasta and all other ingredients and mix. Adjust seasoning.

  6. Heat in microwave just before eating and serve with fresh salad.

  7. It can be served cold, as a starter or as part of a buffet.

  8. You can sprinkle some grated parmesan cheese or grated, hard goat's cheese when eating.

Notes

  • Served in smaller portions, it can be served as a starter.
