Kachumbar Salad North Indian
Mixed Salad 5, North Indian Style

This is a simple salad, served in many North Indian homes. It is eaten only in small quantities, almost like a pickle. Ingredients can vary from season to season. You don't have to use all the listed vegetables, they are there to give an idea. Usually 3-4 vegetables are mixed. All vegetables are grated and mixed, with a simple lime or lemon dressing.
To serve it as a snack, add a handful of roasted peanuts to it.

Ingredients
1 white white Mooli radish, peeled and grated (optional)
1 or 1/2 cucumber, grated.
2 inch piece of ginger (adrak), peeled and coarsely grated or finely chopped*
2 green chillies, finely chopped/sliced (optional)
1 red onion, peeled and finely chopped or coarsely grated
1 small carrot, peeled and grated
1 firm tomato, seeds removed and chopped into small pieces
1 tbsp. finely chopped coriander leaves
1/4 tsp. ground roast cumin seeds
Salt to taste
Juice of 1 lemon or lime
1/4 tsp.grated lemon/lime rind. This gives a lovely flavour to the dish.

* Quantities of these ingredients are only approximate and can vary according to availability and your choice.
Instructions
Prepare all ingredients.
Squeeze surplus juice out of cucumber, to keep the salad crisp. Place all ingredients in a bowl and mix thoroughly.
Serve cold.
Notes
If you store it in a fridge, keep it in an airtight jar or everything will smell of radishes.
