Waldorf Salad

This is one of the first salads I learnt to make when I first came to England in late 60's. It is really easy to make, try making it sometimes.
Serves 4
Ingredients
2 medium red apples
2 celery sticks, cleaned and finely chopped
1/2 cup walnuts, toasted and coarsely chopped
1/4 cup Mayonnaise. You can use any good quality, ready made mayonnaise.
1/4 tsp. salt, adjust to taste
A good sprinkling of freshly ground pepper
Juice of 1/2 a lemon/lime
Instructions
Core and and chop apples. Do not peel.
Sprinkle lemon juice on top, this stops apples from discolouring.
Place mayonnaise, salt and pepper in a bowl. Mix well.
Add apple, celery and walnuts. Mix gently.
Adjust seasoning.
Transfer to a bowl, cover with a cling film* and chill.
Serve on a bed of lettuce, as a side dish for a buffet or use it as a Sandwich filling or Taco shell or pitta bread filling, or as Jacket Potato topping.
You can add a dash of chilli/hot pepper sauce/1 chopped green chilli, if you like things hot.
You can add raisins or very finely chopped dates to this Salad.

Notes
* I collect shower caps when I am travelling. They make excellent bowl covers. It is a shame you can't buy them in a supermarket, mush better than cling film.
