Dhansak or Dhanshak masala is a little like Curry Powder or Sambhar Masala. If your family likes to eat Dhansak regularly, it is worth making extra and storing it in an airtight container. My family love Dhansak. This quantity is enough for approximately 6 tbs. of spice mix.

Ingredients

  • 8 dry red chillies or to taste

  • 2 flat tsp. cumin seeds

  • 5 tsp. coriander seeds

  • 2 tsp. black mustard seeds

  • 2 medium bay leaves

  • 6 tsp. fennel seeds

  • 10 cm. or 4 inch cinnamon stick

  • 24 black peppercorns

  • 1/2 tsp. methi (fenugreek) seeds

  • 3 green cardamom

  • 1 black cardamom

  • 8 cloves

Instructions

  1. Dry-roast all ingredients together, until a nice aroma of roasted spices rises.

  2. Allow to cool before grinding to a fine powder.
