This is a popular Mexican dish that is now popular all over the world. It is usually made from beef, but you can use other mince meats, like lamb or pork or chicken or even fish.
Serves 4
Ingredients
500 gm. or 1 lb mince beef or other meats
2 tbsp. Cooking oil
1 onion, peeled and chopped
2 cloves garlic, peeled and crushed
A 400 gm. tinned, chopped tomatoes
1 green pepper, de-seeded and chopped into small pieces (optional)
A 400 gm. tinned, kidney beans, drained and washed
Salt and pepper
2-3 tbsp. tomato puree/paste
1 cube of meat stock, dissolved in 2 cups water
1 tsp. chilli powder, adjust to taste
1/2 tsp. turmeric( optional)
1 tsp. dry oregano herb
1 tsp. dry thyme herb
Instructions
Heat the oil in a pan, add onion, garlic and green pepper and stir-fry over medium heat, until the vegetables have softened a little/onions are lightly browned, approximately 5 minutes.
Add tomatoes and stir fry for a few minutes.
Add the beef and cook until evenly browned. Stir frequently.
Add the rest of the ingredients, stir and bring to the boil. Cover, and simmer over a low heat, until meat is tender.
Add kidney beans and continue to cook. Stir from time to time, to ensure that it doesn't stick to the bottom of the pan and burn.
Adjust seasoning to taste and serve with tortillas or tacos or rice or baked potatoes.
