Semolina Kheer Milk Pudding

This is a quick milk pudding to make. When making for babies and toddlers, reduce sugar and do not add any nuts, saffron and cardamom.

Ingredients

  • 1 litre milk

  • 3/4 cup semolina sooji or rava

  • 1/2 cup sugar, adjust to taste

  • 1/2 tsp. cardamom powder

  • 10-12 strands saffron, soaked in 1 tbsp. of warm milk/water

  • 10 almonds, blanched, peeled and chopped/shredded coarsely*

  • 5-6 unroasted pistachios, blanched, peeled and chopped/shredded coarsely. DO NOT add nuts when making for babes.

Instructions

  1. Heat a heavy pan or wok and dry fry semolina, until a nice, ?roasted? aroma rises.

  2. Mix semolina with a little cold milk from the 1 litre milk. Keep aside. This stops lump formation later on.

  3. Boil remaining milk.

  4. Add semolina and stir continuously, until right consistency is reached. It should be like a thick custard or rice pudding.

  5. Add sugar and stir it in.

  6. Add remaining ingredients and stir them in. You can save a few almonds and pistachios for garnish.

  7. Serve hot or chilled.
