Semolina Kheer Milk Pudding
Sooji Ki Kheer
This is a quick milk pudding to make. When making for babies and toddlers, reduce sugar and do not add any nuts, saffron and cardamom.
1 litre milk
3/4 cup semolina sooji or rava
1/2 cup sugar, adjust to taste
1/2 tsp. cardamom powder
10-12 strands saffron, soaked in 1 tbs. of warm milk/water
10 almonds, blanched, peeled and chopped/shredded coarsely*
5-6 unroasted pistachios, blanched, peeled and chopped/shredded coarsely*
Heat a heavy pan or wok and dry fry semolina, until a nice, ‘roasted’ aroma rises.
Mix semolina with a little cold milk from the 1 litre milk. Keep aside. This stops lump formation later on.
Boil remaining milk.
Add semolina and stir continuously, until right consistency is reached. It should be like a thick custard or rice pudding.
Add sugar and stir it in.
Add remaining ingredients and stir them in. You can save a few almonds and pistachios for garnish.
Serve hot or chilled.
* Blanched almonds and pictachios can be sliced very easily in a garlic slicer. Make sure that it has not been used for slicing garlic first.
