Espresso Coffee with Chocolate or Vanilla Ice-cream

Cold coffees of all sorts are very popular in India during the summer months. You can make it with any coffee of choice.

Serves 2

Ingredients

  • 2 cups fresh espresso coffee, strong. You can use strong instant coffee, if that is all you have

  • 2-3 tbsp. sugar or equivalent sweetener

  • 1 cube of 70% chocolate bar, chopped finely

  • 2 small scoops vanilla/coffee ice-cream or fresh whipped cream

  • 1 tsp. cocoa powder

Instructions

  1. Place coffee in a pan and heat.

  2. Add sugar/sweetener and chocolate. Once the sugar has dissolved and the chocolate melted, cool and refrigerate the mixture for a few hours, until well chilled.

  3. Pour into tall glasses, half filled with crushed ice. Top with ice-cream or whipped cream.

  4. Dust (sprinkle on top) with cocoa powder and serve with a long handled spoon.
