Mushrooms, Stir Fried

Serves 4-5
Ingredients
500 gm. fresh mushrooms, washed and thickly sliced
1 tsp. chopped ginger
1 tsp. chopped garlic
1 tbs. oil
1 tbs. light Soya sauce
A sprinkle of freshly ground black pepper
Instructions
Heat oil in a wok.
Add ginger and garlic and stir fry on high for a few minutes, until garlic/ginger pieces begin to turn brown.
Add mushrooms, Soya sauce, black peppers and stir fry on high until cooked. This takes only a few minutes. If there is too much water released from mushrooms, drain it away, it can be used in gravy/soups etc.
The finished mushrooms should not be watery and not over cooked.
Serve hot with meats or vegetarian foods or with a Chinese meal.
