Prawn Cocktail or Salad
Prawn Cocktail or Salad
Mamta Gupta
This is an extremely easy starter to make, no cooking experience is required. It is one of my younger daughter Neeta's favourites! it makes an excellent sandwich filling.
Serves 4
Ingredients
225 gm. or 8oz. cooked, peeled prawns, defrosted or fresh, if available (amount is given for peeled prawns)
5 tbsp. or 75 ml. good quality Mayonnaise
2 tbsp. tomato ketchup
1 tsp. tomato purée for colour (optional)
A sprinkling of freshly ground black pepper (you can use 1 tsp. chilli sauce)
4 lime slices, 1 slice per person
1 tsp. chopped dill (optional)
Half a head of lettuce, shredded finely
1 lime, cut into wedges, to garnish
Instructions
Squeeze water out of defrosted prawns gently.
Mix together tomato ketchup, mayonnaise, black pepper and dill.
Add prawns and mix.
Line individual plates or small dishes with the shredded lettuce. Spoon over the prawns in sauce.
Garnish with 1 wedge of lime per person and serve with a good quality fresh bread and butter. Hot, fresh better is great with it.
Notes
You can add juice of 1/2 a lime to the sauce, before adding it to prawns.
