Tomato & Mozzarella Cheese Salad

This is an easy and tasty sald. It can be served as a side dish or as a starter, with some freshly baked bread.
Ingredients
1 firm, medium sized tomatoes per person
100 gm. mozzarella cheese per person, cut into cubes
5-6 fresh basil leaves per person
A sprinkle of freshly ground rock salt
A sprinkle of freshly ground black pepper
Extra virgin olive oil
Instructions
Cut tomatoes into wedges and place in a bowl along with mozzarella cubes.
Add a handful of basil leaves.
Sprinkle salt and pepper.
Serve with a drizzle of olive oil.
You can also cut tomatoes and cheese into slices, arrange on a platter alternating tomatoes with mozzarella slices. Sprinkle basil leaves, salt and pepper. Drizzle olive oil on top, just before serving. You can leave out the salt and pepper all together if you want, but I think they enhance the flavour of tomatoes.
Other cheeses like slices or grated parmesan can be used instead of mozzarella, but I think Mozzarella is best.
Serve with fresh bread or as part of a buffet or as a starter.
