Orange and Rocket Leaves Salad

This is an easy salad to make. You can use any type of lettuce leaves you like, but rocket leaves are best, giving it a sharp edge. You can use any vinaigrette of choice.
Serves 4
Ingredients
2 oranges
4 portions of rocket salad leaves
Dressing:
1/2 tsp. salt
A good pinch of freshly ground pepper
1/2-1 tsp. sugar or sweetener, adjust to taste
2 tbsp. olive oil
2 tbsp. good quality white balsamic vinegar or another vinegar of choice
Instructions
Peel oranges with a sharp knife, to remove skin and white membrane.
Slice into thick circles. Toss with leaves in a bowl. Cover with cling film and keep chilled.
Place all dressing ingredients in a small jar and shake vigorously.
Just before serving, drizzle the dressing on top of salad and mix gently.
You can add a little finely chopped basil to the dressing.
You can add a few mixed pumpkin/sunflower seeds as a garnish.
