Carrot Salad - Sweet
Carrot Salad - Meetha

This is a sweet salad. You can serve it with an ice-cream scoop, in round heaps on the plate. It is very similar to the salad I had in a restaurant in Dublin.
Serves 4
Ingredients
2 carrots, peeled and finely grated
1 tbsp. sultanas or raisins (optional). You can add a handful of blue berries instead.
Dressing
A sprinkle of freshly ground black pepper
A sprinkling of cumin seeds, roasted and coarsely ground
Salt to taste
1 tsp. sugar or equivalent sweetener
1/4 tsp. coriander seeds, roasted and ground (optional)
Fine rind of 1/2 orange (optional)
1-2 tbsp. fresh orange juice (you can use a good quality, sweet/balsamic vinegar instead)
Tarka or tempering
1 tsp. olive oil
1/4 tsp. Nigella/onion seeds, kalaunji/kalownji (optional)
1/4tsp. chilli flakes
Instructions
Mix all dressing ingredients in a bowl or jar.
Place carrots, sultanas/raisins and orange rind in a bowl and mix with the dressing.
Tarka
Heat oil in a ladle, add Nigella seeds when oil is hot. When they crackle a little, add chilli flakes. Stir with a teaspoon and pour over the salad. Stir and mix well.
Serve chilled.
You can serve individual portion on plates, using an ice-cream scoop.
You can also add 1 tbsp. finely shredded ginger to this salad.
