Smoked Mackerel Salad 1

This is a very easy dish to make, specially when you are in a hurry. It is good as salad, sandwich filling and served as Tacos filling.

Peppered smoked mackerel is also good for making this dish. Serves 2

Ingredients

  • 2-3 fillets smoked mackerel. Peppered fillets are tastier.

  • 1 small tin (approximately 200 gm.) corn kernels

  • 2-3 tbsp. Mayonnaise

  • 2 tbsp. tomato ketchup

  • 1 tsp. coarsely ground black pepper

  • Optional: 1 chopped green chilli and juice of 1/2 a lime or lemon

Instructions

  1. Peel, chop or /break mackerel roughly into small pieces. Place in a bowl.

  2. Add and mix all ingredients well. Adjust seasoning.

  3. Serve chilled, with pieces of toast or mini pitta breads or tacos. It is good as a starter, served with a green salad, served as part of a buffet and as a sandwich filling.

Notes

  • You can add a little fresh lemon juice and chopped green chillies.

  • You can also use it to fill vol-au-vent cases. This quantity is enough to fill 6 cases.
