I am Mamta's younger sister and I live in Delhi. Every family in India will have their own way of making this tea, with minor

variations. The amounts of ingredients are approximate, like most of the other everyday recipes. Indians like their tea strong ad wit milk.

Makes 4 cups

Ingredients

  • 2 cups water

  • 2 cups milk

  • 1 tsp. freshly grated ginger (adrak)

  • A large pinch of ground black pepper (kali mirch)

  • A large pinch of cinnamon (dalchini) powder

  • A large pinch of ground cloves (laung or lavang)

  • A large pinch of green cardamom (illaichi) powder.

  • A few broken up sweet basil leaves

  • Sugar or honey to taste

  • 2-3 tsp. tea leaves, according to taste and variety of tea. Strength of tea is an individual taste

Instructions

  1. Boil water and milk with all the ingredients, except tea leaves and sugar/honey.

  2. Add tea leave and boil for a few more seconds, 15-20.

  3. Strain and sweeten with sugar or honey.

  4. Serve piping hot.
