Sambar Masala 2
2 cups coriander seeds or dhania seeds
2 cups red chillies
1/4 cup pepper corns or kali mirch
1/4 cup cumin seeds or jeera
1/2 cup Bengal gram dal (channa dal)
1 big bunch curry leaves (not bay leaves)
2 tsp. turmeric powder
Dry roast all the ingredients in wok on low heat, separately, except turmeric, until they give out a strong ‘roast’ aroma.
Cool and grind all the ingredients to a fine powder.
Store in an air tight jar.
This mix will last for quite a few months in your cupboard.
