Honey-Roasted Cashew Nuts or Mixed Nuts

Nuts served with drinks are very popular all over the world. Bought from shops in small packets, they can be quite expensive and usually fried in oil. This is a quick, easy and cheap way of making them at home.

Ingredients

  • 250 gm. cashew nuts or mixed nuts like almonds, pecans, Brazil nuts, peanuts and cashews

  • 2 tbs. honey

  • 1/2 to 3/4 tbsp. butter

  • 1/4 tsp. salt

Instructions

  1. Preheat oven to 175C/350F/Gas Mark 4 (moderately hot).

  2. Place honey and butter in a bowl, microwave cook on full power for about 30 seconds to melt them together. You can melt these in a pan. Stir and mix.

  3. Add the nuts and stir to coat on all sides.

  4. Spread the nuts out in a single layer (not overlapping, or they will stick together) on a baking sheet/aluminium foil.

  5. Bake for about 15-20 minutes in a pre-heated oven. Oven performances vary, so keep an eye on them to ensure they do not burn.

  6. Take out, then allow to cool completely. They should be crunchy, not chewy.

  7. You can dust them with a little icing sugar. This stops them from sticking together.
