I find this sauce excellent with all foods, including fresh fruits like pineapple & strawberries, as a 'Dipping sauce'.
Ingredients
10 or more fresh chilli's
1 cup palm sugar (you can use ordinary sugar, but the taste is not as good)
3/4/cup water
1/4 cup vinegar
2 tubes tomato puree
2 inch piece of fresh ginger, peeled
6 or more cloves garlic, peeled
2 chopped lime leaves
1 handful chopped fresh coriander leaves
1 tbsp. fish sauce (if strict vegetarian, add 1 tsp. salt instead)
Instructions
Place all ingredients in a pan.
Bring to boil and then simmer for 25 minutes.
Allow to cool and then blitz with a hand blender or in a liquidiser. You should have the same pouring quality as ketchup.
Fill in sterilized bottles.
