Stir Fried Rice

I usually make this dish when I have leftover boiled rice. It is good on its own or with other Chinese dishes.

Ingredients

  • 2 cups boiled, long grain rice

  • 2 tbsp. cooking oil

  • 2 cloves of garlic, crushed

  • 2 tbsp. chopped spring onion greens

  • 1 tbsp. light Soya sauce

  • 1 tbsp. dark Soya sauce

  • Salt to taste

  • 2 eggs, lightly beaten

Instructions

  1. Heat oil in a wok or deep frying pan.

  2. Add garlic and onion greens and stir for a minute or so, until green are wilted.

  3. Add rice and Soya sauce, stir fry and heat through.

  4. Taste salt (Soya has salt) and add if required.

  5. While continuing to stir the rice, add a thin stream of beaten eggs. The egg will cook almost immediately. Alternatively, you can make a thin omelette, cut thin strips/pieces and add to the rice.

  6. Serve immediately.

Notes

  • You can add other ingredients like peas, prawns, leftover roast chicken/other meats etc.
