Martin's Bradford Pudding

This is an Indian version of the good old Yorkshire pudding. It is quite easy to make and tastes delicious, a bit like the American ‘corn biscuit’. You can serve it with roast beef, steak or even with sausages.

Ingredients

  • 25 gm. ghee or clarified butter

  • 100 gm. gram flour or besan

  • Salt to taste

  • 1 tsp. cumin powder

  • 1 tsp. baking powder

  • 1 egg

  • 250 ml. milk

  • Oven dish 15cm x 10cm, 4 cm. deep or Yorkshire pudding tray.

Instructions

  1. Put ghee in an ovenproof dish and put in oven to heat, at 200° C or 400° F.

  2. Put gram flour, salt, cumin or other flavouring like garam masala, baking powder, egg & milk in a bowl. Whisk until bubbly.

  3. Pour into the preheated dish with hot ghee.

  4. Cook for 35 min or so, until risen and cooked through
