Tomato Relish/Salsa, Mild
Tomato Relish (Less Chillies)
Tomato relish is easy to make and a nice dish to serve with Maxican, as well as other savoury meals snacks and even sandwiches. It can stay in the fridge for upto a week.
5-6 ripe, but firm, tomatoes
1 red onion
4-6 jalapeno peppers/hot green chillies in vinegar. Adjust amount to your taste.
2-3 tbsp. green coriander leaves
1 tsp. salt, adjust to taste
Juice of 1 lime (if un-waxed, also add some of its finely grated skin for extra flavour.
De-seed and finely chop tomatoes into very tiny pieces.
Peel onion and chop very finely.
Chop peppers/chillies and coriander leaves very finely.
Put all ingredients in a jar or bowl, mix well.
Adjust seasoning/vinegar to taste and leave in the fridge overnight or at least for a few hours.
You can add 1-2 tsp. of extra virgin olive oil to this relish.
