Chocolate Chip Cookies

Note from Mamta: Claire is a university friend of my daughter Kavita's. Her cookies and fudge are very popular. These cookies are best warm from the oven when still slightly gooey on the inside

Ingredients

  • 200 gm. chocolate (70% dark chocolate is great for this)

  • 120 gm. granulated sugar

  • 120 gm. soft light brown sugar

  • 120 gm. butter

  • 120gm. plain flour

  • 120 gm. plain wholemeal flour

  • 1 egg

  • A few drops of vanilla extract

Instructions

  1. Chop the chocolate bar into small chips.

  2. Cream the butter and sugars together until light and fluffy.

  3. Beat in the egg and the vanilla essence.

  4. Stir in the flours and the chocolate chips.

  5. Spread rough dollops onto a greased baking tray or onto a baking sheet(* see note).

  6. Bake in a medium oven, at 190C/375F/Gas 5, until golden brown (about 10-15 minutes). They look a little soft and slightly chewy when done.

Notes

  • If you want to bake them fresh when you need them, make cylinders of the mix after step 4, wrap in a cling film and leave in the fridge/freezer. When ready, defrost, slice and bake as given (as shown in the pictures)
