Peanut Butter Cookies

Peanut Butter Biscuits

These are easy to make and delicious biscuits. It is one of those recipes that has long been in my collection, on a greasy and often used piece of paper! We think it was a recipe my daughter Kavita used as a child, when she was going through a baking phase! Makes approximately 50.

Ingredients

  • 300 gm. self-raising or cake flour

  • 120 gm. crunchy peanut butter

  • 120 gm. butter or margarine

  • 120 gm. light brown or caster sugar

  • 120 gm. raisins or sultanas, chopped roughly (chopped, dry apricots are also nice)

  • 2 small eggs

  • Rind/zest of one orange (optional)

Instructions

  1. Place Peanut butter, margarine, sugar and orange rind in a bowl and beat until fluffy.

  2. Beat in 1 egg at a time.

  3. Add raisins/sultanas and fold them in.

  4. Sift the flour in and fold it in using first a spatula and then your fingers, to make a dough.

  5. Break the dough into small balls of approximately 3 cm. diameter (size is your choice). You can either make them into flat rounds, or leave them as blobs on the baking sheet, for a slightly more rustic look.

  6. If you wish, you can press in half of peanut on top of each biscuit, as shown in the last picture.

  7. Place on a greased baking tray or on baking sheet, leaving 4 cm. around each, for them to spread out as they cook.

  8. Bake at 175-180C or 350F or Gas mark 4, for approximately 20-25 minutes, until they look golden brown. They will rise and then fall slightly. They should look golden brown.

  9. Allow to cool on a wire rack and store in an airtight jar.

Notes

  • Smaller size will cook faster and oven performances vary, so keep an eye on them.

  • They can be served with ice-cream.
