Seville (Bitter) Orange Ice Cream

I was planning to make Seville orange ice-cream today, but as I was feeling too lazy to go to the Supermarket to get Seville oranges, I made it using late Tim Elkington's Saville Orange marmalade instead. I did not even have to make the zest, as the marmalade has a lot of lovely thick zest. It is very easy and truly scrumptious.

Serves 4-6

Ingredients

  • One 284 ml carton of double cream

  • 2 heaped tbsp. home made Seville orange marmalade (more if you want it sweeter)

  • Juice of one orange

Instructions

  1. Beat the cream in a bowl until semi-stiff.

  2. Add marmalade and orange juice, beat them in.

  3. Freeze in an airtight container for 5-6 hours or overnight. You can make it in an ice-cream maker.

  4. Leave in out for 5-10 minutes before serving or soften in microwave for 30 seconds on full or 1-2 minutes on defrost.
