Filo parcels with an Indian Twist

This is a slightly hotter version of the popular filo pastry parcels, with a goat cheese stuffing. These parcels are very easy to make and they look & taste very scrumptious.
Ingredients
200 gm. packet filo pastry (approximately)
For the Filling
150 gm. soft Goat cheese
1 green chilli (or according to taste) thinly sliced. Do not remove seeds if you like it hot!
1-2 tbsp. chopped coriander leaves
1/4 tsp. freshly milled black pepper
A pinch of salt
Cooking oil to brush the pastry with
A handful of fresh pomegranate seeds can also be added for a slightly sweet taste
Instructions
Mix all ingredients, except filo pastry, in a small bowl.
Spread a damp cloth on the work surface. This stops the pastry from drying out.
Cut pastry into 7 cm x 7 cm (3 inch x 3 inch) rectangles.
Brush each rectangle with oil, on both sides and place 3 rectangles on top of each other, with fanning edges, in a way that they make a star.
Place a small dollop of cheese mix in the centre.
Gather edges in the centre, like an old fashioned money purse, and gather all edges together. Squeeze to seal.
Keep covered with a moist cloth until all parcels are made. You can keep them in the fridge in an airtight container until just before serving.
Bake in preheated oven at 200 C/400 F/Gas 5-6, for 8-10 minutes, until they look golden and crisp.
Serve hot with a sweet or hot chilli sauce or chilli oil.
