Chocolate Almond Biscuits

Biscuits are relatively easy to make at home, as long as you have a good oven. The aroma from home made biscuits baking in the oven is so deliciously tempting that you have to experience it to believe it! Ready-made biscuits don't even come close to it. There are several types of biscuits that I make and I have added a few recipes to this site.
Makes approximately 15-20.
Ingredients
125 gm. plain flour (maida)
125 gm. butter at room temperature
60 gm. caster sugar
A couple of drops of vanilla essence
2 level tsp. cocoa powder
A pinch of salt
2-3 tbsp. chopped almonds
Instructions
Pre-heat oven to 350?F or 180?C (10?C less in fan oven), gas mark 4.
Place butter sugar and vanilla essence in a bowl and beat until smooth and creamy. Electric beater takes away the hard work from beating.
Sift flour, cocoa powder and salt into the bowl and fold it in.
Knead it very gently to make a smooth dough.
Break small pieces to make balls.
Flatten them a little, gently, into biscuit shapes.
Gently dip and press on both sides in a plate full of chopped almonds, pressing lightly.
Place on a greased baking tray or on a baking paper. Keep them apart, leaving about 2 cm space all around, for the biscuits to expand.
Bake in the centre of a pre-heated oven, for 12-14 minutes. They rise a little and then go down.
Allow to cool on the tray for 2-3 minutes. This make them crisp.
Transfer to a wire rack. When completely cool, store in an airtight box.
Notes
Serve with tea or with ice-cream.
