This is one the many sauces that go extremely well with fish. This recipe comes from the one of the BBC food message boards users and it is said to be a fool proof recipe - Mamta
Ingredients
30 gm. or 1 oz butter
25 gm. or 3/4 oz. flour
500 ml. or 1/2 pint fish stock or light chicken stock
1 tablespoon of white wine vinegar
1 dessert spoon of sugar
1 large tablespoon chopped dill
Yolk of 1 standard egg
A little salt and freshly ground pepper
Instructions
Melt the butter in a pan.
Add the flour, stir and then pour on the stock. Continue stirring over moderate heat until boiling, then simmer 2 - 3 minutes.
Take off the heat and add the vinegar, sugar, dill, salt and pepper to taste.
Beat the egg yolk in a heat resistant bowl.
Add a small quantity of the hot sauce gradually to it, beating all the time.
Return the mixture back into the pan. Whisk vigorously for a minute or so over gentle heat. It will thicken and is then ready to serve.
Serve with salmon or other grilled/baked fish.
