Fat Free Hot And Sour Vegetable Soup

This soup came about when we were trying the 5:2 diet, but wanted something filling, hot and tasty. I have not counted the calories, but it has helped us to loose weight. You can change the taste by adding different vegetables and different spices. Try to avoid carbohydrate rich root vegetables in large amounts, things like potatoes, swedes, sweet potatoes etc. If you sprinkle some cheese on top, make sure it is either a low fat cheese or use only a small amount. Amount of ingredients depends upon how many people you are making it for. I use about 2 large serving bowls full of vegetable to get two large helpings.

Ingredients

  • 1 large serving bowl full per person of any mix of vegetables, chopped into bite sized pieces (Broccoli, Brussels sprouts, Mushrooms, Radish, Carrot, Spinach, Cabbage, Onion, Ginger, Garlic, if you like it in a soup, Tomatoes, fresh, tinned and/or tomato

  • 2 mugs water

  • Vegetable stock cubes or granules or bullion mix of your choice, amount according to taste. If you don’t have it, just use salt and pepper.

  • Juice of half a lemon, adjust amount to taste

  • Any chilli sauce of choice

  • You can also add freshly ground black pepper, herbs like parsley, coriander leaves, chopped chives or spring onions green.

  • Optional

  • Sprinkle a little crumbled Feta cheese on top for garnish for garnish.

  • Sprinkle a little cheddar cheese on top and place under a grill until it bubbles.

  • Add a tablespoon of rice to it during cooking to make it more filling or add a handful of instant noodles at the end of cooking.

Instructions

  1. Prepare all vegetables.

  2. Place in a suitable sized pan with water, bring to boil.

  3. Cover and simmer until vegetables are cooked. Do not overcook. If using leaf vegetables like spinach, add them only about 5 minutes before the end.

  4. Add stock cube/granules/powder to you taste.

  5. Squeeze lemon juice in according to your taste.

  6. Add chilli sauce to taste. We like it hot!

  7. Adjust seasoning.

  8. Serve into bowls, garnishing with herb of choice, if you want to. Serve immediately.

  9. You can make it in advance and reheat, but it is not suitable for freezing, the taste is not the same!

  10. For special occasions, sprinkle grated cheese of choice on top and grill for a few minutes.

  11. You can drop a poached egg into the soup b0wl before serving.
