Peaches, Baked

This is an easy and tasty recipe for when peaches are in season and not expensive.

Serves 3-6

Ingredients

  • 3 ripe peaches

  • Pan of boiling water

  • 30 gm. or 2 tbsp. unsalted butter

  • 1 tbsp. sugar, brown sugar or jaggery powder are better

  • 30 ml. or 1 oz. Amaretto almond liqueur (optional)

  • Greased baking tray

  • Vanilla ice cream or single cream to serve.

Instructions

  1. Heat oven to 180 C for fan ovens or 370 F.

  2. Place peaches in the pan of boiling water. Turn heat down and simmer for a minute.

  3. Gently lift out of water a with a slotted spoon. Do not overcook or they will get soggy.

  4. Half peaches gently by slicing deeply all around each peach in a circle.

  5. Hold one half in each hand and gently twist both halves in opposite direction. With luck, both the peach halves will come off the stone!

  6. Remove skin (optional).

  7. Place peach halves on the greased tray, cut side up.

  8. Sprinkle sugar on each half.

  9. Soften butter in a microwave oven for 10 seconds, unless it is already soft.

  10. Mix butter and the liqueur together well.

  11. Spoon this mixture equally on to each half of the prepared peaches.

  12. Bake for 20-25 minutes. Keep an eye on the peaches to make sure that they do not burn, as oven times vary. You can also bake them in an Air fryer for 3+3 minutes, checking half way through.

  13. Serve hot, one or both halves per person, with ice-cream or fresh cream.
