Sweet Potato Balls

Sweet-potato Balls

This dish was served to us in Wanglang National Park Wild Life Reserve in China. These balls are gently sweet and go well with tea or coffee-Mamta

Ingredients

  • 500 gm. sweet potatoes

  • 1-2 tbs. rice flour. Glutinous rice flour is better, but ordinary will do

  • 1 tbs. brown sugar

  • 3-4 tbs. white sesame seeds (skinless)

  • Oil for deep frying

Instructions

  1. Boil or microwave sweet potatoes until soft. To boil in microwave, place in a plastic bag or microwave boiler with 3-4 tbsp. water and cook on full for 8-10 minutes. Allow to cool.

  2. Peel and mash in a bowl.

  3. Add sugar and rice flour.

  4. Shape into small balls with wetted or greased palms.

  5. Roll in sesame seeds placed in a plate.

  6. Deep fry in moderately hot oil until golden brown on all sides.

  7. Serve as snack. You can serve honey or sugar syrup with people with a very sweet tooth.

Notes

  • I have not made them with potatoes. I am sure that this recipe will work just as well for potatoes-Mamta.
