Lemon Mousse 1

This is an easy pudding to make for a dinner party.
Ingredients
400 gm. can of sweetened condensed milk
Grated rind and juice of 3 lemons ((you can use lime)
3 large eggs, separated
150 ml. double or whipping cream
1 tbs. almond flakes, roasted in a microwave for 2-3 minutes.
1 litre fruit or pudding bowl to serve.
Instructions
Whisk egg whites until stiff. Keep aside.
Pour condensed milk in a bowl.
Stir in lemon juice, lemon rind and egg yolks into the condensed milk and whisk for a couple of minutes.
Fold in egg whites into this mixture. The mix should begin to look thick.
Spoon the lemon mixture into a serving bowl.
Decorate with roasted almond flakes
Cover and chill overnight.
Serve chilled.
Notes
Whisk egg white first. Once your whisk has been used to beat other things and it has either other ingredients on it, or it is wet from washing, it is impossible to get the egg whites stiff.
