Mixed Vegetables Orientale

We had this dish while on a recent trip to India. Both my boys thoroughly enjoy and love it. It is a very light yet filling dish . It could be served with garlic bread-Seema.

Serves 4

Ingredients

  • 2 capsicum or green pepper or bell pepper, chopped into bite size pieces

  • 2 large onions (150 gm), peeled and chopped into large pieces

  • 2 large, firm tomatoes cut into bite size pieces

  • 1 cup shredded cabbage

  • 2 tbsp. oil

  • 1 cup paneer or Indian cheese, cut into large cubes

  • 2 tbsp. tomato ketchup (amount to be adjusted according to your taste)

  • 1 tbsp. Worcester sauce or Imli (tamarind) Sauce, (taste to be adjusted according to your taste). Imli/tamarind sauce makes the dish sharper.

  • 1 tsp. or less salt

Instructions

  1. Heat oil in a wok or kadhai.

  2. Add onions and fry for a minute.

  3. Then add the capsicum and fry for 2-3 minutes.

  4. Add tomato ketchup, Worcester sauce or imli (tamarind) sauce and salt. Taste and adjust according to your own taste.

  5. Stir fry for a minute.

  6. Add the tomatoes and the cheese cubes. Stir for a couple of minutes.

  7. Adjust salt and sauces.

  8. Add the cabbage and cook covered for a minute or two till the cabbage becomes a little soft, not too soft.

  9. Serve with garlic bread or plain rice.

Notes

  • If you cannot buy paneer locally, see recipe (Search for: making + paneer. Key words: Indian, Vegetarian, Original language). You can also use Tofu but the taste will be a little different.
