Note from Mamta: This is one of my favourite dishes. Our mother used to make them on a cloudy/rainy day! To this day, when it is cloudy, I think of fresh Meetha Cheela/Chilla and crisp Pakoras, with a cup of hot, Cardamom Tea. They always bring a picture to my mind of my parent's house in India on a monsoon day, when we all sat on the verandah, some of us on a swing, eating pancakes and pakoras.

Ingredients

  • 1 cup chapatti flour (use 50/50 plain white/wholemeal flour, if chapatti flour is not available)

  • 1 cup semolina

  • 1 cup grated 'gur' or Jaggery or muscovado sugar or brown sugar or white sugar

  • 1/2-1 tsp. green cardamom seeds, powdered/crushed

  • 1 cup water or milk.

  • Oil for pan frying.

Instructions

  1. Dissolve Jaggery or sugar in hot water or milk. Allow it to cool.

  2. Mix all ingredients, except oil, and make a smooth batter. It should be of a pouring consistency.

  3. Heat a tava or griddle and pour a tsp. oil on it.

  4. Sprinkle a few drops of water and gently wipe with a wet piece of kitchen paper or cloth. This will coat the whole griddle with a thin layer of oil.

  5. Pour a ladle of the batter on the griddle in the centre and spread it outwards using circular motions. You need to use the back of the ladle to do this. You can buy special ladles in India that have a flat bottom . Personally, I use a simple round ladle. Spread the pancake gently, as sweet pancakes are a little more difficult to spread than savoury ones.

  6. Pour a little oil all around the edges. If you are using a non-stick pan, you need very little oil.

  7. Turn it over with a flat spatula and cook the other side.

  8. Serve hot with a spoonful of cream or fresh, unsalted butter.

Notes

  • You should make the first pancake as a test pancake only, with a smaller amount of batter. It usually sticks to the pan a little and curls. After this, the pan is uniformly covered by a film of oil and pancakes cook better.

  • You can serve them with maple syrup or honey or with a sweet stuffing of your choice.
