Pineapple and Cheese Rings

An easy dessert to assemble.

Serves 4

Ingredients

  • 8 tinned or fresh pineapple rings

  • 250 gm. fresh paneer or cottage cheese

  • 25 gm. sugar*

  • 7-8 strands of kesar or saffron

  • 1 tsp. milk

  • 1 tsp. ground cardamoms

  • 1 tbsp. grated or finely chopped pistachio

Instructions

  1. Drain the pineapple rings and place on a platter.

  2. Dissolve saffron in 1 tsp. of warm milk.

  3. Mash cheese until it is smooth. You can do this quickly in a food processor.

  4. Add saffron, cardamom powder and sugar to the cheese and mix thoroughly.

  5. Using a teaspoon or an icing bag, cover the pineapple rings with this mix.

  6. Decorate with chopped pistachios.

  7. Serve chilled, on its own or with cream.

Notes

  • *Artificial sweetner can be used.
