Pineapple and Cheese Rings

An easy dessert to assemble.
Serves 4
Ingredients
8 tinned or fresh pineapple rings
250 gm. fresh paneer or cottage cheese
25 gm. sugar*
7-8 strands of kesar or saffron
1 tsp. milk
1 tsp. ground cardamoms
1 tbsp. grated or finely chopped pistachio
Instructions
Drain the pineapple rings and place on a platter.
Dissolve saffron in 1 tsp. of warm milk.
Mash cheese until it is smooth. You can do this quickly in a food processor.
Add saffron, cardamom powder and sugar to the cheese and mix thoroughly.
Using a teaspoon or an icing bag, cover the pineapple rings with this mix.
Decorate with chopped pistachios.
Serve chilled, on its own or with cream.

*Artificial sweetner can be used.
