Chicken or Meat Fried Pulao/Pilaf Rice from Left Overs

This is a quick recipe to use leftover roast chicken, meat, turkey etc. You need some plain boiled rice, either left over or fresh. Quantities of rice or chicken are only approximate. You can also add a few frozen peas if you like.

Serves 4-5

Ingredients

  • 100-200 gm. leftover, roast chicken or meat cut into small, bite size pieces (leftover cooked meat or chicken can be used)

  • 400 gm. rice

  • 2 tsp. Oil

  • 1 tsp. cumin seeds

  • 1 small onion, peeled and thinly sliced. I often use pre-fried onions which are available from most good Indian stores in UK

  • 1-2 green chillies

  • 1 heaped tsp. ready made meat masala powder or Curry Powder. Meat masala mix packets are available from most Indian stores. You can also use Biryani masala powders or pastes.

  • Salt to taste. Check if masala already has some.

Instructions

  1. Heat oil in a frying pan or wok.

  2. Add cumin seeds and allow them to splutter.

  3. Add onions and green chilli and fry until golden brown. If using pre-fried onions, add them with chicken.

  4. Add chicken/meat and masala and stir fry for 10-15 seconds.

  5. Add rice and stir fry for 10-15 seconds, ensuring everything is mixed well.

  6. Turn heat low, cover and cook for another 8-10 minutes, to heat the rice and chicken through. You may need to sprinkle a little water if rice is too dry.

  7. Serve hot.
