Cold Coffee with Milk

This is a refreshing and cool drink that I make often in summer months. When I was in medical school in India, we had a place outside the college gates that made superb cold coffee. We used to have it when we could afford it. When we travel to warm countries, they often sell it in the chiller section of their supermarkets and we love to have it for lunch, with a Sandwich. It is really very easy to make at home. Serves 2

Ingredients

  • 4 tsp. instant coffee or 1/2 cup of any type of strong coffee of choice. I often use decaffeinated coffee

  • A couple of tbsp. boiling hot water

  • 3-4 tsp. sugar or sugar substitute/sweetener. Adjust to taste

  • 1 1/2 glass cold milk (you can use skimmed milk, but full cream milk tastes best)

  • 2 scoops vanilla ice cream

  • Ice cubes

  • Blender or hand beater

  • Optional:

  • 1 pinch coffee powder for garnish

  • A pinch of cinnamon powder

Instructions

  1. Dissolve coffee in a 1-2 tbsp. boiling water. Keep aside.

  2. Place milk, coffee, sugar and half of the ice-cream in a blender and blend for 5-10 seconds, until nice and frothy. Don't do this for too long or the milk may curdle.

  3. Place 2 ice cubes in each of the two tall glasses and pour the coffee over them.

  4. Scoop the remaining ice-cream on top of the coffee in each glass.

  5. Sprinkle the coffee and/or cinnamon powder, and serve immediately with a straw.

Notes

  • If you do not have a blender, you can use a whisk to beat all ingredients together.
