Stuffed Courgette with Mozzarela Cheese

Stuffing or filling makes a vegetable rather special. Courgettes comes in different sizes and shapes. here I have used a round, yellow courgettes from my garden and used a simple filling. Stuffing can be changed depending upon what you have in the fridge. Spices can also be changed to suit your taste. Adding herbs like coriander/parsley/chives is also optional and your choice. You can stuff any vegetable that can be hollowed out without disintegrating completely. All ingredients are approximate. This stuffing can be used for other vegetables. Courgettes in these pictures were freshly picked from my garden. Serves 4-6

Ingredients

  • 1-3 medium size courgettes, round or long ones

  • For the stuffing:

  • 1 medium onions, peeled and roughly chopped

  • 1 inch piece of ginger, peeled and roughly chopped

  • 2 tbsp. chopped tomatoes (1 tomato of average size)

  • 1 spring onion, chopped

  • 2 green chillies or 1 tsp. of chilli flakes (adjust to taste)

  • Salt to taste

  • 2 tbsp. olive or other cooking oil

  • 5-6 feta mozzarella cheese balls or pieces (other cheese of choice can be used instead)

Instructions

  1. Preparing vegetables:

  2. Cut off a 'lid' from each courgette. If using long courgettes. half them lengthways.

  3. Scoop out the flesh and keep aside.

  4. Place courgettes in a microwave steamer and steam for 4 minutes on full power. Drain, brush with oil and keep aside.

  5. Filling

  6. Heat oil in a pan. Add onions and ginger and fry for a few minutes.

  7. Add spring onions, scooped out courgette flesh, salt, chilli flakes. Stir and cook covered until all mixed up and almost dry. Adjust seasoning.

  8. When cool, add Mozzarella cheese balls or grated or broken up cheese and stir them in.

  9. Fill the courgettes with the stuffing.

  10. Keep aside until ready to cook. These can be kept in the fridge at this stage for up to 24 hours.

  11. Heat oven to 200C. Cook in the centre of of the oven for 20-25 minutes

  12. Serve hot or cold.

Notes

  • You can adjust the amount of spices to your own taste.
