Lemon Cake

This easy to make cake recipe has come to me from my dear friend Eve, given to me a long time ago, perhaps in mid nineteen seventies. It is quite delicious - Mamta
Ingredients
Mix 1
250 gm. self raising flour (cake flour), sifted*
1/2 tsp. salt
Rind on 1 large lemon
Mix 2, in a large bowl
75 gm. caster sugar
120 gm. butter
Other ingredients
2 eggs, lightly beaten
3 tbsp. milk
A few drops of yellow food colouring (optional)
For the topping:
60 gm. caster or ground sugar
Juice of 1 lemon, approximately 3 tbsp.
*Sifting the flour through a sieve removes any lumps and traps some air, which make the cake lighter.
Instructions
For mix 1
Place flour, salt and lemon rind in a bowl and mix.
For mix 2
Cream sugar and butter together well in a large bowl, until light and fluffy.
Making cake:
Add 1 egg at a time to mix 2 and continue beating well, until fluffy.
Add and fold in mix 1, using gentle figure of 8 movements.
Transfer to a lined baking tray and cook on gas mark 4 or 170? C or 350? F for 1 hour, checking after 40 minutes (more efficient ovens may need less time). Cooking times vary from oven to oven.
Take out of the baking tray and make a few light slits on the surface of the cake using a sharp knife.
Mix castor sugar and juice of 1 lemon.
Pour it evenly on the cake and allow to seep in.
Cut into squares and store in a cake tin.
