Pitta Bread Pockets with Various Fillings

This is an easy and quick meal using any left overs, vegetarian or non-vegetarian. Just make sure that there is no gravy, or they will get soggy. For those living in India, Pitta bread can be replaced with naan. Any salad can be used, things like crisp lettuce leaves or rocket salad leaves, sliced cucumbers, tomatoes, avocadoes, radishes etc.

Ingredients

  • Pitta breads, half per person (or more)

  • A Few filling suggestions (you can use many more)

  • Left over Tandoori Chicken (picture 1, by Steve Lister) or Roast Chicken. There are several tandoori chicken recipes on this site.

  • Roast Ham (Picture 2 by Steve Lister) or other cold cut meat slices and Salad

  • Tinned Tuna and Salad (picture 3 by Steve Lister)

  • Roast Chicken and Salad with Mayonnaise Tandoori/fried fish

  • Vegetable sabji like Aloo bhaji or

  • Chickpea masala

  • Grilled halloumi or Paneer Cheese with salad.

  • Tuna and corn salad with or sliced onions or green salad

  • Bavarian or other good quality ham and salad

  • Dressing ideas

  • Any dressing of your choice (optional)

  • Sour cream

  • Fresh yoghurt

  • Green Mango Chutney goes very well with Indian style fillings, like tandoori chicken and vegetable bhajies.

  • *The amount of these things depends on your choice and on what you have available. There are no fixed quantities to ingredients in this dish.

Instructions

  1. Warm pitta breads in a toaster. Heating not only makes them taste better, it also makes it easier to split them.

  2. Cut each pitta bread in half and open it like a pocket.

  3. Line the pocket with salad.

  4. Top with a little dressing on the salad.

  5. Fill some of your chosen filling in each pocket.

  6. Enjoy!
