Date Squares with Rice Crispies
Date Squares
Mamta Gupta
The recipe comes from the mother of one of my younger daughter Neeta's school friends, whose name was Eve, as far as I can remember. She gave me this recipe a long time ago. I can see her in my mind's eye today! I have had this recipe for so long, since mid nineteen eighties.
It is very easy to make and tastes very nice. Give it a try, you will love it. Also see Oat, Fruit and Nut Flapjacks and Apricot and Raisin Oat Flapjacks.
Ingredients
125 gm butter or margarine
2 tbsp. sugar
250 gm dates, stones removed and chopped
100 gm rice crispies, a cereal (you can use rice 'murmurae' in India)
200 gm cooking chocolate
Instructions
Melt butter and sugar in a pan.
Add and mix chopped dates.
Cook over a low heat until soft and mushy. Turn heat off.
Add rice crispies and mix well, gently.
Turn it out on a greased baking tray and spread it in a 2 cm thick layer.
Press firmly to make it compact. Keep aside to cool.
Melt chocolate in a bowl, standing in a pan of gently simmering water.
Pour over the date mix, spread evenly and allow to cool, marking the squares with a knife before it sets completely.
Cut when cold and store in an airtight box.
