Kachumbar Parsee Salad

The salad recipe given here is a mix of most commonly used ingredients for a kachumbar, but you can use other salad ingredients too, as in picture 2. To have it as snack, add a few roasted peanuts to it.

Ingredients

  • 7-8 inch piece of cucumber, peeled and chopped small

  • 2 red onions, peeled and thinly sliced or chopped small

  • 1 tsp. Salt

  • 2 firm tomatoes, seeds removed and chopped small

  • 1 inch piece of ginger, peeled and coarsely grated

  • 3-4 fresh chillies sliced, more or less chillies can be added, according to taste

  • 1 tbsp. chopped coriander leaves

  • Dressing (optional):

  • 2 tbsp. lemon juice or juice of 1 large lemon

  • 2 tbsp. brown sugar

Instructions

  1. Sprinkle onions with salt and leave for 30 minutes to 1 hour.

  2. Meanwhile, make dressing by dissolving sugar in lemon juice. Heat in microwave for 1 minute or less. Warming makes the sugar dissolve easier. Keep aside.

  3. Squeeze onions between the palms to remove all salted liquid.

  4. Mix all ingredients and adjust salt (you would have squeezed out most of the salt from onions and may need extra salt for ingredients).

  5. Served chilled.
