Sambhar Powder 1, A South Indian Dal Spice Mix-Mamta's
Sambhar Masala 1
This South Indian Curry Powder is a hot and fiery spice mix from South India, which is used to spice up various dals (lentils), as well as sambhar.
1 tbs. oil
2 tea cups whole red chillies
200 gm. coriander seeds
50 gm. cumin seeds
1 1/2 tbs. fenugreek seeds
1 1/2 tbs. mustard seeds
1 1/2 tbs. black pepper corns
2 tsp. Bengal gram or chana dal, skinless
2 tsp. urad/urid/urd dal
2 inch piece of cinnamon stick
10-12 curry leaves (not bay leaves)
1-2 tsp. poppy seeds
2 tsp. turmeric powder
Heat the oil in a frying pan.
Fry red chillies for a few minutes and keep aside.
Roast/ dry fry (without oil) all other ingredients, except turmeric, in the same pan.
Allow to cool.
Grind everything together to a powder, mix in turmeric powder and store in an airtight jar.
