This dressing is good with finely chopped mixed salads like Kachumbar or Parsi Salad , but can be used for any green salad. Indian Salad Platters are usually served with a simple dressing of lemon juice, salt and pepper, added at the last minute. If salt is added too much in advance, it ‘pulls out’ the water from salad and makes it loose its crispness. Often, ingredients are served alongside for people to add according to their taste. Serves 1 dinner plate sized platter.
Juice of 1 lemon or wine vinegar
2 tsp. extra virgin olive oil
Salt to taste
A good sprinkle of freshly ground pepper
1/2 tsp. sugar
