French Vinaigrette

French Vinaigrette

This is a simple dressing that can be adjusted to taste by adding several flavours/ingredients.

Ingredients

  • 1/2 cup light balsamic or wine vinegar

  • 1 1/2 cups extra virgin olive oil (I often make it with only 1/2 cup of oil)

  • Salt to taste, (1/2 tsp. approximately)

  • 1/2 tsp. freshly ground black pepper, adjust to taste

  • 1 – 1 1/2 tsp. Dijon or whole grain mustard

  • 1/4 tsp. sugar or sweetener

  • Other ingredients that can be added: Various herbs like parsley, chives, chervil, coriander, dill or mixed herbs, finely chopped or 1 heaped tsp. of Dijon or other mustard. or chilli flakes or crushed garlic or lemon/lime zest.

Instructions

  1. To make, place in a jar and shake well.
