Blue Cheese Salad Dressing

Ingredients

  • 1 cup blue cheese of any variety, like Danish blue, Stilton, Dolce latté etc.

  • 1 cup good quality Mayonnaise

  • 1/2 cup light balsamic vinegar or any other light vinegar of good flavour (use only as much vinegar as needed to get a creamy consistency)

  • Salt and pepper to taste

Instructions

  1. Break cheese into small pieces.

  2. Place everything in a blender.

  3. Add vinegar slowly and blend until smooth. If you do not have a blender, crumble or grate cheese finely, place everything in a large bowl and whisk until smooth.
