Salmon Fish Salad
This is an easy salad to prepare, very popular in our house, specially for a BBQ that has been thrown together in a hurry. I use it as a as a salad or as a filling/topping for any of these; jacket potato, pitta bread pocket, tacofilling, sandwich, tomato halves, on top of crisp lettuce leaves. Serves 4

1 tin of salmon fish or 1 cooked tuna steak. The picture here shows salmon pan fried with Hoisin sauce marinade, which was leftover from an earlier meal
1 small red onion, peeled chopped finely
A good sprinkling of coarsely ground black pepper
1/2 cup of a good quality Mayonnaise
2 tbsp. tomato ketchup or tomato salsa
Juice of 1/2 lime/lemon
1 green chilli, finely chopped
Drain and flake salmon roughly.
Place all ingredients in a bowl and mix gently with a fork.
Cover with a cling film and chill.
Serve as in introduction.
