Tomato Relish/Salsa, Mild

Tomato Relish (Less Chillies)

Tomato relish is easy to make and a nice dish to serve with Maxican, as well as other savoury meals snacks and even sandwiches. It can stay in the fridge for upto a week.

Ingredients

  • 5-6 ripe, but firm, tomatoes

  • 1 red onion

  • 4-6 jalapeno peppers/hot green chillies in vinegar. Adjust amount to your taste.

  • 2-3 tbsp. green coriander leaves

  • 1 tsp. salt, adjust to taste

  • Juice of 1 lime (if un-waxed, also add some of its finely grated skin for extra flavour.

Instructions

  1. De-seed and finely chop tomatoes into very tiny pieces.

  2. Peel onion and chop very finely.

  3. Chop peppers/chillies and coriander leaves very finely.

  4. Put all ingredients in a jar or bowl, mix well.

  5. Adjust seasoning/vinegar to taste and leave in the fridge overnight or at least for a few hours.

  6. Serve chilled
